Who Makes A Great Fillet Knife-And How Are You Sharpening It
Yes- This is a Catching, Killing and Eating question ...
Been using the two sizes of Berkley Fillet knives - But the sharpness now seems to deteriate even worse on every sharpening ~ And I just want to get ONE Quality Knife ~ and Stone - To do it all.
I bought a Elect Fillet Knife from BPS around Christmas - and it works really well on the Crappies. -- Not so good on the Stripers as I have almost lost my thumb - save for the glove- and I just don't like the feel of it at all in my hand like a filet knife itself.
What Quality Knife do you prefer for a 10" or 12" knife - and the type of Stone you use to hone it with ??

Forschner..its the only knife worth using. When I worked on the Saltwater boats this is all everyone ever used.

Gerber makes a fantastic filleting knife..As for keeping it and any other knife sharp, get yourself a good diamond honing stone..I can put an edge on my Gerber pocket knives you can shave with, if you feel gutsy..

Forschner and Dexter Russell both have decent steel and sharpen really well, "SomeGUY" is on target buy quailty and a good stone...

I have cut literally thousands of pounds of halibut and salmon plus more than a few elk and deer. I use Forchner as well. They are cheap and take a razor edge in a few strokes on a round diamond honing stick and a steel. Gerber is also good and I have several of their old folding fillet knives that I take to Alaska.

You can get good honing stones at wood working stores.

Dan if you are just doing stripers and bass and crappie give a look at an electric knife. Just like you carve the holiday turkey with. About $15 at Target.
It is the only thing I use to fillet fish and will never go back to a regular knife

All mentioned are great knives, especially the Forschner. Having experience with Cutco knives in the kitchen I can tell you they are great for that purpose but I wasn't sold on their fisherman's knife. Biggest drawback to Cutco is you can't sharpen them yourselves. Have to ship for sharpening if I remember correctly.

we have had Cutco for years and they are great for kitchen use. They tend to dull fast if you are using them a lot and it takes a while to get your blades back..
Go grab a Forschner and a stoned and you will not have to worry about a knife ever again. I use to filet hundreds of fish a day on the salt. I have used a Forschner for 15 years and only had to replace it once and that was when I grounded it down so low from sharpening it over the years. I just picked up a new Forschner a few years back.

I was a deckhand on the partyboats in Half Moon Bay for many years and used the Russell 9" fillet knife to clean my customer's rockfish, ling cod, salmon etc . This was the standard knife used among deckhands and fish cleaners at that harbor.
I used a stone to sharpen it back then but now I use a Hunter Honer and love it.

i was a deckhand on 3/4 day boats i wouldnt use any thing but a 10 in forshner, and a quality stone is important

Electric all the way. You will get used to the feel. No need for a stone either.

I just picked up a new CUTCO knife and I will say it is a pretty sweet knife. Not a very cheap knife but the service they give makes up for it.

Ditto. Highest rated knife brand by Cooks Illustrated (Americans Test Kitchen T.V. show) They are very affordable, sharp and hold a edge well. I also use the Forschner hand held sharpener.some guy wrote:Forschner..its the only knife worth using.

Only problem with Cutco is they are WAY overpriced and to be honest they are not that good a knife, I just had a close family friend's daughter come over and do the whole dog and pony show and Cutco knives could not touch my fillet knife when they started asking me to cut rope and leather because these simulate real food items (not sure what the people at Cutco eat!!) then they had me cut a tomato and the old Dexter made the Cutco look like a butter knife, I paid 10.00 for it at a garage sale and the Cutco "fisherman knife" was like 80.00 plus shipping and from what I have been told they also tax the shipping, of course you don't find out about that until you get your invoice. Some people love them for me in the kitchen I use Henckels and for fillets Dexter is an awesome and cheap fillet knife! Yes JIGS I do use it at the Flemming fish cleaning station at Pedro!

I have been using the Cutco (adjustable blade) fillet knife for about 3 years. I clean at least 200+ crappie each year and 15-20 Strippers and it works fine.
I like the adjustable blade because you can shorten it when you are doing the little crappies.
They also provided a hand held manual sharpener when I bought the knife set.
