2 pounds STRIPED Bass filets
1 lemon cut in half
1 cup flour
1/2 cup oil (I prefer Canola or Peanut)
salt and pepper to taste
Batter
1 cup flour
1/2 teaspoon salt
1/4 teaspoon chili powder or cayenne pepper (use both for extra zing)
1 cup beer (I prefer Newcastle for the recipe and the meal)
Slice filets into approximately 2-inch strips.
Squeeze lemon juice onto fillets and roll in flour seasoned with salt and pepper.
Prepare batter by combining flour, salt and chili powder/cayenne pepper. Gradually blend in beer until thoroughly mixed.
Heat oil in fish fryer or other appropriate pan that will accomodate entire fillet.
Dip filets in batter and fry until golden brown (2 minutes on average).
Drain on paper towel to remove excess grease.
Enjoy with tartar sauce, home fries and more beer (in a glass, not on the fish ).
Serves 4-6.

2 Cups Bisquick
2 Lg eggs
2 Tbls Favorite Cajun Rub(Quick Shake or Kinders)
1/2-3/4 c. Corona(also try a dark ale or wheat brew, WOW!)
4 Striped bass filets - Cut into 1.5-2" wide strips
4 large peeled Potatos
1 lrg Zip Lock Bag
Cajun Rub
Chips
Slice potatos in half length wise
Lay flat and slice again into 1/4" thick strips
Place in Bag and add 4 tbls of rub
Shake until rub is evenly coating chips
Place on a grease(PAM) flat tray and bake at 325 until golden brown
Fish
Mix Bisquick and rub in lrg bowl.
Add eggs, stir until blended.
Mix in first 1/2 cup of beer.
Texture of batter should be such that fish strip, slowly sinks and adheres to fish, not dripping off.
Add additional beer or Bisquick as needed to attain this consistancy.
Place in Deep fryer with Peanut oil(canola or Olive oil will work) at 375.
Depending on fryer size 3-4 strips at a time.
When strips float, rotate with wooden spoon until golden brown(2-3 minutes).
Remove and place on paper towel covered rack to drain oil and cool.
Serve with beer or white wine. Can also provide Tartar or cocktail sauce and lemon as a condiment, but not really necessary. Bon appatite!

Cooch your making my stomach hurt. Are you making Striper pancakes with wheat beer syrup? No wonder they call you a river rat.
I personally like them tempura style with a little ponzu sauce.

I tried this last night with some cod fillets! Turned out great!!
Thanks for recipe, I'll be using it on many more fish to come.
By the way, I used Sam Adams Winter Ale instead of Corona, Nice!!
